2.Cool the Chocolate:
Stir continuously until the temperature drops to 86–88°F (30–31°C).
Use an electric fan to help cool it down evenly.
3.Start Coating:
Set your mixer to its lowest speed and slowly pour in the melted chocolate over the strawberries.
Allow the chocolate to cool and set, then add another layer of chocolate.
4.Repeat Coating:
Continue layering chocolate until fully used.
If the chocolate hardens during the process, gently reheat it with a hairdryer while stirring to maintain smoothness.
5.Set Aside Coated Strawberries:
Transfer the coated strawberries to a separate bowl.
6.Reclaim Leftover Chocolate:
Use a hairdryer to melt any remaining chocolate in the mixing bowl, scraping it back into the glass bowl. Remelt if needed.
7.Final Coating Layers:
Return the coated strawberries to the mixer on low speed.
Gradually add the remaining melted chocolate and strawberry powder in small amounts, mixing until everything is evenly coated.
8.Finish and Pack:
Let the strawberries set completely.
Store them in an airtight bag or container to keep them fresh.
