Air Fryer Coconut Shrimp


Ingredients:

1 pound large raw shrimp, peeled and deveined (tails on or off, as you prefer)
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup sweetened shredded coconut
1 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
Cooking spray or oil, for greasing the air fryer basket
Optional: Sweet chili sauce or mango dipping sauce, for serving

Instructions:

1. Preheat the Air Fryer:

Preheat your air fryer to 375°F (190°C) for 5 minutes.

2. Set Up Breading Stations:

In three separate shallow dishes, place the all-purpose flour in one, beaten eggs in the second, and a mixture of sweetened shredded coconut, panko breadcrumbs, garlic powder, paprika, and salt in the third.

3. Bread the Shrimp:

Working one shrimp at a time, coat it in the flour, shaking off any excess.
Dip the flour-coated shrimp into the beaten eggs, making sure it's fully coated.
Roll the shrimp in the coconut-panko mixture, pressing gently to adhere the breading to the shrimp. Ensure the shrimp is evenly coated with the coconut-panko mixture.

4. Grease the Air Fryer Basket:

Lightly grease the air fryer basket with cooking spray or a small amount of oil to prevent sticking.

5. Air Fry the Coconut Shrimp:

Place the breaded shrimp in a single layer in the preheated air fryer basket. Depending on the size of your air fryer, you may need to do this in batches to avoid overcrowding.

Air fry the coconut shrimp at 375°F (190°C) for 8-10 minutes, flipping them halfway through the cooking time, until they are golden brown and crispy.

6. Serve:

Once the coconut shrimp are done cooking, remove them from the air fryer and let them cool slightly before serving.
