Modern Pizza Grilled Cheese

Ingredients:

8 slices of thick-cut bread (white, whole wheat, or sourdough)
1 cup marinara sauce (store-bought or homemade)
1/2 cups shredded mozzarella cheese
1/2 cup pepperoni slices (or any pizza toppings of your choice)
1 tablespoon unsalted butter, softened
Optional toppings:

Sliced bell peppers
Sliced black olives
Sliced mushrooms
Fresh basil leaves

Instructions:

Heat a large non-stick skillet or griddle over medium heat.

Lay out all eight slices of bread on a clean work surface.

Spread a thin layer of marinara sauce on one side of each slice of bread. This will be the inside of the sandwich.

On four slices of bread (with the sauce side up), evenly distribute the shredded mozzarella cheese.

Add your preferred pizza toppings on top of the cheese. You can use pepperoni slices, or get creative with other ingredients like sliced bell peppers, black olives, mushrooms, or fresh basil leaves.

Place the remaining four slices of bread (sauce side down) on top of the cheese and toppings to form sandwiches.

Spread a thin layer of softened butter on the outside of each sandwich.

Carefully place the assembled sandwiches on the preheated skillet or griddle.

Cook the sandwiches for about 3-4 minutes on each side or until the bread turns golden brown and the cheese is melted and gooey.

Once the sandwiches are grilled to perfection, remove them from the skillet and let them cool for a moment.

Slice each sandwich in half diagonally to create two triangles.
