No Waste: Recycle and Reuse Chocolate

There are two common methods for cleaning excess chocolate from a coating drum:


1. Cleaning without removing the dragees:



Keep the drum rotating with the dragees inside.


Use a hairdryer to gently heat the chocolate on the inner wall of the drum, causing it to melt.


The rotating dragees will pick up the melted chocolate.


Repeat this process until all the chocolate on the drum's inner wall has coated the dragees.


2. Cleaning after removing the dragees:



Remove the dragees from the drum.


Keep the drum rotating and use a hairdryer to heat the inner wall for 5-10 seconds (heating for too long can cause the chocolate to overheat).


When the chocolate changes from matte to glossy, it indicates melting; stop heating at this point.


While the drum continues to rotate, use a spatula to move the melted chocolate from the center to one side, collecting it into a bowl for later use.


Once the collected chocolate cools to the appropriate temperature, it can be used to coat the previously removed dragees.


Tip1:

If scraping off the chocolate with a spatula is difficult after heating, it suggests the chocolate layer is thick, and the hairdryer has only heated the surface. In this case, increase the heating time.


Tip2:


Is it necessary to wash the drum with water after heating?


Typically, it's unnecessary to clean the drum with water and detergent before resuming the coating process. Heating the chocolate with a hairdryer also warms the drum, so washing with water can help lower the drum's temperature. A cooler drum temperature is more conducive to chocolate solidification.


Both methods have their advantages. Based on our tests, the second method is more suitable for beginners.
